Eileen has two decades of experience working in education and promoting literacy. She helped to launch Walter Payton College Prep in 2000, one of the top-ranked schools in the country and has supported principals and teachers in over 130 schools in Chicago in developing systems to promote college readiness and individual student growth through a focus on critical literacy. She has worked with elementary schools and high schools with large ELL and low-income populations.

It uses Chinese eggplants and baby potatoes both stuffed with spicy masala. My husband prefers it without being stuffed so I have a recipe that is done without stuffing the eggplants and potatoes. 5-6 baby potatoes - slit into half till the base.
